The Flavor Chemistry and Metabolomics Lab, managed by Dr. Chris Kerth, is a BL1 lab with gas chromatography/mass spectroscopy/olfactometry as well as high performance liquid chromatography/mass spectroscopy/time-of-flight capabilities and typical wet-chemistry lab capabilities (pH, proximate analysis, SDS-PAGE, Western blot, and more). Being directly down the hall from the Sensory Kitchen makes analyses of freshly-cooked food and meat samples convenient and allows for direct analysis and interpretation of samples from those that are served to trained and/or consumer sensory panels. One of the hallmarks of our program is our ability to draw direct correlations between the trained sensory; consumer panel evaluations; and the volatile and non-volatile chemical composition of the item being analyzed.
